Eating local: Red Apron Butcher at Union Market

With my recent trip ro Barcelona and the Mercat de la Boqueria, it only emphasized my desire to eat locally, though don’t get me wrong, I will still travel great distances for delicious food 🙂

Union Market is in my ‘hood and a friend of mine reminded me that Red Apron has Green Hat gin and tonic on tap. So the Mister and I checked it out. 

I put in our order of one of the specials (crispy pork belly) and the Italian beef. I ordered the gin and tonic and the Mister got a sparkling water. While we waited for our food, I took a few pics of the meat counter.

I decided that I would get an order after we finished eating. Our food arrived and we devoured every bite!

That gin and tonic is DANGEROUS 🙂 goes down way too smoothly!!
After we finished lunch, I got 1/2lb of bacon, a 1/4lb of tete d’pho, and a portion of secreto. The butcher at the shop told me that secreto is the pork version of the flank so I decided to give it a go. After a quick google, I also learned that this cut is usually associated with the Iberian pig and after Barcelona, it made perfect sense for me to cook a version of it stateside! Wish me luck!
